French Omelette

Ingredients

  • 2 eggs
  • 1 ½ Tbs water
  • 1/8 tsp salt
  • 1 dash ground black pepper
  • 1 Tbs butter


1) In a small bowl, mix together the eggs, water, salt, and pepper. Beat until combined, but not frothy, with a fork. Heat a 20cm non-stick skillet with flared side over medium-high heat until it is hot.

2) Add butter to skillet. When butter has melted, add egg mixture to skillet; lower heat to medium. Immediately begin stirring the eggs gently but continuously with a wooden or plastic spatula until mixture resembles small pieces of cooked egg surrounded by liquid egg.

3) Stop stirring and cook for 30 to 60 seconds further or until the egg is set but shiny.

4) Take a spatula and lift and fold an edge of the omelette about a third of the way toward the centre. Remove from the heat. Fold the opposite edge of omelette toward the centre and transfer to a warm plate.
