Butterscotch Waffles

Ingredients

  • 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 Tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 cup buttermilk (regular milk also works)
  • 6 Tablespoons vegetable or canola oil
  • 1 large egg - separated
  • 1/2 teaspoon vanilla extract
  • 1/2 cup butterscotch chips


1) Preheat the waffle maker to medium-high.

2) In a large bowl, mix together the flour, cornstarch, sugar, salt, baking powder and baking soda.

3) In a separate medium-sized bowl, stir together the milk, oil, egg yolk and vanilla until they are well mixed.

4) In a third bowl, beat the egg white until peaks form.

5) Add the wet ingredients and butterscotch chips to the dry ingredients and stir until just combined and moistened. Gently fold in the beaten egg white. The batter should have a slightly lumpy consistency.

6) Spoon  the batter onto the waffle maker and cook until golden brown.
