Three Pepper Pasta Salad

  • 55 g tri-colour pasta
  • 20 ml olive oil
  • 6 ml white wine vinegar
  • 1 g fresh basil leaves
  • 1 g grated Parmesan cheese
  • Pinch of salt
  • Pinch of ground black pepper
  • 1/8 red bell pepper, julienned
  • 1/8 yellow bell pepper, julienned
  • 1/8 orange bell pepper, julienned
  • 15 g fresh tomato, chopped
  • 8 g black olives, drained
  • 30 g mozzarella cheese, cubed

1. Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.

2. In a blender or food processor, blend the olive oil, white wine vinegar, basil, Parmesan cheese, salt, and pepper until smooth.

3. Take a large bowl and toss together the cooked pasta, dressing mixture, red bell pepper, yellow bell pepper, orange bell pepper, tomato, and olives. Top with mozzarella cheese to serve.
