Penne, Tomato and Mozzarella Salad

  • 55g penne pasta
  • 10ml olive oil
  • 1/8 bunch green onions, chopped
  • 1/8 clove garlic, minced
  • 25g quartered cherry tomatoes
  • salt and pepper to taste
  • 25g mozzarella cheese, diced
  • 7g grated Parmesan cheese
  • 20g fresh basil
  • 2 large black olives, halved

1. Cook the pasta in a large pot of boiling salted water as directed on package, until it’s just tender. Drain, and set aside.

2. Heat olive oil in a small saucepan. Add the green onions and cook, stirring occasionally, for 2 or 3 minutes. Stir in the garlic, and cook for a further 2 minutes.

3. Add the pasta, tomatoes, salt, and pepper. Cook over a low heat to warm through.

4. Stir in the mozzarella and Parmesan cheese. Coarsely tear the basil leaves in halves or thirds. Add these to the pasta with the olives, and serve immediately.
